Happy Thanksgiving!

Happy Thanksgiving everyone! What a wonderful day it was yesterday! I have so much to be thankful for this year and it was wonderful to be able to spend the day with the ones I love. I know I mentioned before that I wanted to go to culinary school for pastry and baking arts. Well…I decided I’m going to go for it. Starting January 23rd I will be going to culinary school. I could not have done it without my family and amazing boyfriend. So obviously I have a lot to thankful for.

Obviously for Thanksgiving I wanted to bake a little something to take with me to my grandma’s house. I thought, pumpkin pie bites that I saw on Bakerella would be perfect! Flash forward to the supermarket and there were NO PUMPKINS. Not a pumpkin in sight, not even canned pumpkin. I could not believe it. So instead I made mini pecan pies:

Mini Pecan Pies!

(pardon the picture taking, I was taking these as I was running out the door to Thanksgiving dinner)

    • I used store bought dough molded them to mini muffin pans. Roll it out so that you can get double the amount of pie dough, plus the dough is pretty thick straight from the box and you don’t need all that dough for one mini pie.
    • Then mixed 1 1/2 cups pecans, 1 cup brown sugar, 2 tbsps butter, 2 eggs, 1 tsp of cinnamon, and 1/2 tbsp of vanilla extract.
    • Brush some egg white onto the crust rim
    • Put the mix in the little pies then bake in a oven heated to 350° for 20 minutes.

These looks incredible! Do they have a gooey center like butter tarts or are they mostly nuts? I must make these this holiday season!

Thank you! They were mostly nuts, if you wanted more of a gooey center I’d go with a more traditional pecan pie filling (with corn syrup etc) Hope that helps!
