Well, at school yes. At home, not so much. School and work and trying to have a life make it tough to take time out to bake. But there has been a whole lot of baking at school. And a whole lot of eating. LOTS and LOTS of eating. The gym and I have become even better acquainted, and veggies never looked so good after tasting a whole bunch of sweets.

Anyway, here’s a little recap of what I’ve been doing at school recently, in case your interested.

Champagne gelee with raspberries inside.

Basically champagne jello, but made from scratch. I didn’t happen to make this one, but doesn’t it look so pretty?

 Pannacotta. I’ve never had this before, but it was pretty delicious.

Chocolate Souffle.

Instead of spending Valentine’s Day with my boyfriend, Dave, I spent it at school making these bad boys.

No, they were not a better date than Dave.

Cheese Souffle.

I ate two of these in one sitting. THAT good. Heavenly. Can’t say enough about it. I have to practice souffle for my semester final, so I guess I’m going to have to make one of these. Sounds awful…

Here’s a recipe I found online in case you’d like to try to make one of your own.

Coconut Souffle. To be honest, I didn’t have time to try it. So I have no idea if it’s good or not.

I know I haven’t posted much as of late but between school and work and trying to have a life I’ve been pretty busy. Culinary school has been pretty awesome. There are some days I’m there and I can’t beleive I’m actually doing it and I get so excited. And then there are some days I’m so tired that I am like “What the hell am I doing? Why did I leave my job again?” Overall though, it’s been pretty great so far. My instructor is wonderful…and if any of you have ever had a Shake Shack shake you can thank her for making the wonderful custard recipe. (I found that out online…I had to do some research!) Since I’ve only just started 2 or 3 weeks ago we are still going over all the basics, like how to cut fruit and this is what creme fraiche tastes like. Things like that. Every once in a while though we get to bake, and that has been awesome. I haven’t taken many pictures but I’ll share the few I did take.

This was from the 2nd or 3rd day…we made caramel and tried to make little designs. I was just so proud of myself with these.

These little babies are called Bouchons, the signature dessert of Bouchon Bakery. After talking about them for an hour our instructor decided it was time to make some to eat while we watched a movie about sanitation. (Instant perk of being in culinary school!)

 I had another picture of me in my uniform but for some reason it’s not showing. I’ll work on that, it’s a really attractive uniform. And by that I mean it’s the least attractive thing I’ve ever worn.

And that’s life in culinary school so far!

Yesterday I took a cupcake baking class in the city at Institute for Culinary Education. Oh, the cupcakes we made! Now I have so many ideas for different cupcakes, and the itch to bake again. Good thing I have a day off today, maybe there will be another treat later 😉

Sorry I haven’t posted much these past few days. The past two weeks/weekends have been super busy!!

Luckily, I have a three day weekend this upcoming weekend (thanks Christopher Columbus) so hopefully some baking will be done! Also, I’m taking a baking class in the city, hellooo cupcakes. Hopefully, I’ll be able to share some pictures of that.  I must say too, the cake balls were a hit and delicious and I devoured almost half of that box while in DC.

my parents know about this little challenge of mine, so i’m really not sure why it comes as such a surprise when im back at the baking. “what are you baking again?” YES. im baking AGAIN. please stop asking me about this, you don’t seem to mind when what i’m baking is in your tummy. geez!

anyways, i’m in the process of making my third treat and it’s going horribly wrong right now. i need tips on melting/dipping things in chocolate. i started dipping my cake balls in white chocolate and it was just awful. i had to stop. i’m not sure if it’s the cake balls or the white chocolate but it was throughly frustrating.

help!!! 

Just found out the culinary school I would like to go to is having an open house in October…yay! Had to share, I’m excited. See ya later desk job. Hello long hours, crummy pay, but an infintely happier me. I don’t think I’m cut out for working under sometime the rest of my life. Here’s to entrepreneurship!

I’ve been thinking for quite some time about going to culinary school for baking and pastry arts. I’ve always wanted to open up my own coffee shop/bakery. I’m looking at the Institute for Culinary Education, has anyone ever been or know someone who went? Of course I ask everyone about it and read a lot online, but I can’t get enough. I’ve been thinking about it a lot today and am a little bored so my mind is wandering.

Thoughts?

Either way, I’m going. I just like hearing stories.
